Unlike some people, I LOVE to cook! This was mom's recipe before she got sick, and I've been making it ever since. Jack and Dad love it. So will you - trust me!!! This is a recipe for 2 pies - one to bring to Thanksgiving, and the other to give your impatient family members so they don't pick at the crust of the "real" pie.

INGREDIENTS:

    Crust
  • 2 cups flour
  • 1 tsp. salt
  • 2/3 cup shortening
  • 7 tbsp. water
  • Filling (for each pie)

  • 3 or 4 large cooking apples
  • 1/2 cup sugar
  • 3/4 tsp. cinnamon
  • Topping:

  • 1/3 cup sugar
  • 3/4 cup flour
  • 6 tbsp. butter

DIRECTIONS: To make 2 crusts, combine 2 cups of flour with 1 tsp salt and cut in 1/3 cup shortening until it is all most. Add another 1/3 cup shortening and cut in until it's like cornmeal. Add about 7 tablespoons of water, one at a time, tossing with a fork after each addition. Divide in half, mold each half into a ball and roll out on a floured cutting board.

To make the filling, slice apples into pie crust. Sprinkle with cinnamon and sugar. Melt butter and add to sugar and flour and mix with your hands into crumbles. Pat over apples.

Bake at 400 degrees for 35-40 minutes.
