This was our mom's recipe. She was a wonderful cook, and Bessie and I are pathetic excuses for daughters when it comes to this stuff. It's amazing how you can work in a restaurant for years and have not a clue what to do with turnips. But, they're generally edible. Hopefully I'll manage to make mom proud this year…
INGREDIENTS:
- 1 onion - chopped
- 2 tbsp. olive oil
- 3 turnips - peeled and thinly sliced
- 1 McIntosh apple - cored & chopped
- 2 tsp. curry powder
- 1 tsp. salt
- lemon wedges
DIRECTIONS:
Cook onion, stirring constantly, in the oil for 5 minutes over medium heat until it begins to brown. Stir in turnips and cook 5 minutes. Add apple, curry and salt. Cook until tender - about 5 minutes. Squeeze lemon over dish. Serve hot with extra lemon wedges.
